Tis the season...

There is just something about the holidays that makes my baking, interior décor side want to shine! Being a Cancer, DOB 6/26, I am naturally a homebody and nurturer but these traits of mine are particularly strong when the holiday season strikes. Something about the cool air, images of snowfall, fireplaces, and cozy blankets calls on me to deck out my home with festive trinkets and bake sweets, filling the air with sweet (think of another word so you don’t say sweet twice) smells to match the festive ambiance.

Last week I had the good fortune of stumbling upon the beautiful holiday Cake.

and I thought YES! Not only is it beautiful but it’s going to be delicious.

“I wonder if I can recreate this masterpiece, #PALEO Style?” I thought to myself. #Challenge Accepted. So here we go!

Crust

  • ½ cup unsweetened, raw coconut flakes

  • 1-1/2 cups almond flour

  • 2 tablespoons grade A maple syrup

  • 2 tablespoons coconut oil, melted, plus more for brushing the spring pan

  • pinch of salt

Chocolate filling

  • 2 medium size avocado, just barely ripe, on the firmer side

  • ½ cup unsweetened cocoa powder

  • ¾ cup grade A maple syrup

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon vanilla

Garnish

  • 1 pint of raspberries

  • ½ can of coconut cream, room temperature
